Hi, Cindy, this recipe will make the best baked beans ever, simply by adding maple syrup at the end.

Maple Syrup Baked Beans (SERVES 6-8 or more and they freeze well)

Ingredients

  • 2 pounds (1Kg) dried navy beans (small ones)
  • 1/2 cup (25 ml ) molasses
  • 1 Tbsp (15ml) plus 1 tsp (5ml) dry mustard
  • 1/2 cup (125 ml) brown sugar, packed
  • 4 whole plum tomatoes (canned) crushed ( I freeze the rest for next time )
  • 2 bay leaves
  • 1 Tbsp. (15 ml) plus 1tsp (5ml) salt
  • 1/2 tsp pepper
  • 2 tbsp (25 ml ) Worcestershire sauce
  • 1 very large onion peeled and chopped
  • 8 or 10 slices of bacon (optional)
  • 1/2 cup maple syrup (goes in later)

Directions

  1. Soak beans overnight in cold water, drain, rinse and discard water.
  2. Preheat oven to 300 F (150C)
  3. In a small saucepan combine molasses, mustard, brown sugar, tomatoes, bay leaf, salt, pepper, Worcestershire sauce, and 5 cups of water.
  4. Bring to boil and whisk until sugar is dissolved.
  5. Chop onion and place in the bottom of bean crock or heavy Dutch oven.
  6. Transfer soaked beans to crock or pot then pour in molasses mixture.
  7. Stir, then spread the bacon, if using, over the top, cover with a lid.
  8. The liquid should cover beans by 1/2 inch, add more water when needed, don't let them dry out.
  9. Bake without stirring for about 5 to 6 hours or until beans are tender. (remove bay leaf)
  10. In the last 1/2 hour of cooking add the 1/2 cup of MAPLE SYRUP and season with salt and pepper if necessary.

You will get rave reviews!!!!!
