CINDY DAY: Fall-ing for local apples!

This recipe is from Doris Glavine: 

"Hi Cindy,   

I read that you were looking for fall pictures and apple recipes. Here is my very favourite recipe using apples. I have shared this recipe with so many people over the years. This makes enough salad for eight. I adjusted the amount to make it for two or any number. 
 
WINTER WALDORF SALAD 
 Six apples with the skin left on (any firm apple) 
1 cup diced celery 
1 cup seedless red grapes 
1/3 cup raisins 
3/4 cup toasted pecans 
1/2 cup pomegranate seeds 
 
Dressing: 
1/2 cup mayonnaise 
1/2 cup sour cream 

3 Tbsp of liquid honey 
2 tsp grated lemon rind 
1 Tbsp lemon juice 
1/2 tsp ginger 
Pinch of salt 

Dice unpeeled apples, place in a bowl with celery, raisins and grapes. Whisk together dressing ingredients and stir into salad. Cover and refrigerate for up to two hours. To serve, add nuts to salad and toss. Mound salad onto a bed of mixed greens or just lettuce. Garnish with pomegranate seeds.

“This recipe is an old family recipe and worth sharing. The original recipe was frosted with a butter icing but a cream cheese icing is even better! 

Aunt Sylvia’s Applesauce Cupcakes:  Makes 24 

1/3 cup margarine 

2 cups flour 

1 tsp. soda 

¼ tsp. salt 

1 tsp. cinnamon 

½ tsp. cloves 

½ cup raisins 

½ cup chopped nuts 

1 cup white sugar 

1 egg 

1 cup applesauce 

  

Butter Frosting: 

1/3 cup margarine 

½ tsp. vanilla 

1 ¼ cup icing sugar 

1 Tbsp. milk 

Mix well. 

  

Cream cheese Frosting: 

1 pkg cream cheese softened 

¼ cup butter softened  

½ tsp. vanilla 

1 cup of icing sugar. 

Mix well. 

Sift dry ingredients together in a bowl.  Add raisins and nuts, and stir to coat. Cream margarine and sugar in a large bowl.  Add egg and beat. Add dry ingredients and stir together till mixed. Fill paper-lined muffin pans 2/3 full.  Bake at 375 degrees for 20 to 25 minutes. Cool and frost with preferred frosting.
