Bannock is a traditional indigenous bread that, in the capable hands of Chef Marcel Boucher, gives an old-fashioned hotdog a modern twist.

Where might one bite into one of these delicious treats? At the CNE Aug. 23-25! Bannock dogs are the brainchild of Chef Boucher, whose creations are infused with his Lac Seul First Nations heritage, and his love of taking traditional family recipes and making them his own. Boucher is head chef with Windigo Catering, a solely Indigenous-owned catering company that feeds 500 people every day at Newmont-Goldcorps’ Musselwhite Mine in northwestern Ontario.

“Originally I am from Sioux Lookout. That’s where my mother’s reserve is. Working close by to my reserve makes a difference in my life,” says Chef Boucher, who has partnered with the Ontario Mining Association (celebrating its 100th anniversary) to not only create these delicious treats, but to bring awareness of the partnerships between small businesses such as his with the mining industry.
