BLOOMFIELD, P.E.I. — A little over a year ago, Jeremy and Josh Coughlin said they missed out on a chance at taking over the operation of a restaurant and bar in the Bloomfield Mall by three hours.
So, when the opportunity came up again last week to lease the restaurant space, they jumped at the chance.
“Let’s do it,” was Josh's immediate response.
The brothers, who already operate JSC Vapes and Hydroponics in the Bloomfield Mall and used to be located next door to the restaurant before its expansion, still have not settled upon a new name for the enterprise. It most recently operated as Uncle Mike's Bar and Grill Up West.
A lawyer’s letter, dated Feb. 4 and posted on the customer’s entrance to the restaurant, indicated the lease for the space was terminated due to default on the rent.
Depending on how quickly permits, licensing and renovations can be completed, the Coughlins estimate it will be at least three weeks before the restaurant reopens.
They will be renovating the kitchen, repainting the restaurant and installing video lottery terminals (VLTs).
Both owners have experience in the restaurant and bar business with Jeremy having worked as manager and bouncer and Josh having worked in bars and kitchens in Montreal and Vancouver.
