The annual P.E.I. International Shellfish Festival is underway on Charlottetown’s waterfront.

The big tent is set up at the Charlottetown Event Grounds, and activities began on Thursday with the event going until Sunday.

Kyle Panton, the chef at Sim’s Corner Steakhouse and Oyster Bar, is the two-time defending P.E.I. chowder champion and he will be back to defend his title.

“It would be nice (to win it again),’’ Panton said with a huge grin. “It’s nice because everyone wants to beat me. Everyone has someone they want to beat, and they want to beat chef Kyle.’’

This is the sixth year Panton has participated in the chowder challenge.

Irwin MacKinnon, chef at Papa’s Joe’s Restaurant, is the only P.E.I. chef competing in the Garland Canada International Chef Challenge.

He’ll be in the kitchen ring with a roster of chefs from the likes of France, United Kingdom, New York, Vancouver, Toronto and Montreal.

Today’s events include a celebrity chef culinary demonstration by Lynn Crawford, featuring P.E.I. oysters.

There will also be an oyster shucking championship and awards presentation prior to the Irish Descendants taking the stage tonight to entertain the crowd.

Crawford returns on Saturday for a demonstration using P.E.I. lobster in a show called P.E.I. Lobster Eggs Benny. In addition, she will be doing a meet-and-greet cookbook signing.

There will also be a mussel industry competition, clams demonstration and oyster shucking.

On Sunday, Crawford will have a demonstration using P.E.I. mussels, there is the Canada’s Smartest Kitchen International Chowder Championship and Garland Canada International Chef Challenge finals before the tent closes at 6 p.m.
